The programme, aimed at staff who prepare, handle or serve food in the company's 450 restaurants, is broken down into 15 short modules and covers the causes and implications of poor food safety, preventative actions and best work practice. Brewers Fayre developed the programme in partnership with Creative Learning Media and Timely Intervention. The training was delivered using an El-box, which uses touch technology via a pen and has voice recognition technology. Between July 2003 and April this year, 12,658 staff underwent the training, at their own pace, and more than 92 per cent completed, gaining the necessary 100 per cent pass mark for a qualification in food hygiene approved by the Royal Institute of Public Health. David Goodson, head of operational skills training for Whitbread Pub Restaurants, said: "Based on the fantastic success of the El-box food safety training, the solution is being rolled out across the whole of Whitbread and we're looking at other areas of training that can be delivered this way, such as product knowledge or brand standards".
